Peanut Butter Chocolate Cheese Tart

Made this gem on my daughter's first birthday party. Found the resepi in mom's magazine - Saji, snapped a pic and balik rumah buat. Super easy yet yummy. As usual, altered to my preference.

Ingredients:-
60ml fresh milk
90gm cooking chocolate
226gm cream cheese (i used a block of cream cheese)
125gm icing sugar (i used 100gm, and yet I still feel I need to reduce the sugar amount)
240ml cream (i used a small box of thicken cream)
1 tsp vanilla essence
250gm digestive biscuits (I used cream-o choc biscuit + melted butter)
125gm peanut butter (I used peanut butter with chocolate)

Method:-
1.Crumb the biscuit dan padatkan as the base of the tart. Set aside.
2. Heat the milk and melt the cooking chocolate. Put aside.
3. Cream the peanut butter, cream cheese, vanilla and sugar.
4. In another bowl, whip the cream. Take 1/3 of the whipped cream and mix with no. 1.
5. Fold in the balance of cream to no.1.
6. Pour the mixture on the prepared base.
7. Pour the choc ganache. Serve chill.

Chocolate Dipped Strawberry



SIL came back from Cameron Highland, bawak balik gorgeous strawberry, malangnya anak yang kecik tak mampu nak makan sebab agak masam pada taste bud dia.

since ada cooking choc kat rumah, turn the gorgeous strawberry to choc dipped strawberry. dengan mommy skali laju layan.

Ingredients
Strawberries - lap kering-kering
Cooking Choc
Boiling water

Method
1. cairkan choc guna double boil method
2. once choc dah cair dip the strawberry dalam choc and dirikan dalam cawan guna lidi satay.

Bubur Jagung



bubur jagung adalah antara bubur kegemaran ai. :)

Ingredients

1 tin jagung manis (brand kimball)
1 kotak santan
1 cawan air
4 subu besar gula
2-3 helai daun pandan

Method
1. Masukkan 1 cawan air, daun pandan, gula dan jagung manis ke dalam periuk dan didihkan.
2. apabila telah mendidih, masukkan santan.
3. continue masak sehingga menddih sekali lagi.

SIAP.

ps - sedap gak kalau campur sagu.

::Bubur Pulut Hitam::




My kids love bubur pulut hitam. here goes my version:-

::Ingredients::
2-3 genggam kecik pulut hitam - dibasuh
4-5 gelas air
daun pandan
1/2 kotak santan kecik + 1 cup of water
gula melaka + gula pasir (ikut sesedap rasa)

:: Method ::
1. Rebus pulut dengan air sehingga lembut.
2. bila dah lembut, masukkan daun pandan, gula & santan.
3. masak hingga mendidih.

i love serving it warm, instead of cold.

:: Konniyaku Jelly ::



selalunya weekend, i'll try to make something for the little tummies at home, be it baked goods or simple jelly for the kids to indulge. plan last weekend nak baking, tapi tak sempat nak menerjah kedai baking beli keperluan, so buat jelly saje. ingredients main agak2 jek.. so jom layan.

:: Ingredients ::

1 tin longan - asingkan jus dan buah
air
susu ideal
1 paket jelly konniyaku
3/4 cup sugar (perlu reduce lagi sebab too sweet!)
drops of colouring (merah, biru, hijau, kuning)

:: Method ::
1. campurkan susu, air dan jus longan sehingga mendapat sukatan lebih kurang 2 cawan.
2. masakkan jelly konniyaku mengikut arahan pek.
3. setelah masak, bahagikan kepada 4 bahagian, dan titiskan colouring.
4. masukkan ke dalam acuan jelly da masukkan buah longan yang telah dipotong kecil.
5. sejukkan.

:: Sagu Gula Melaka ::

SIL called and invited us to her house for dinner. made this untuk dishare with all. sagu gula melaka is onee of my favourite malay dessert. enjoy!

: Ingredients ::
~ Sagu
1 cup of sagu
few drops of green colour
3 cups of water

~ Sugar
1 cup of gula merah
1/2 cup of castor sugar
1 cup of water

~ Kuah Santan
1 cup of santan pekat
salt to season
2 cups of water
daun pandan

:: Method ::

~ Sagu
1. Boil water, add sagu & drops of green colour.
2. Boil till sagu is cooked.
3. Transfer sagu to small cups/containers.
4. Keep chill.

~ Sugar
1. Mix everything in a pan & cook till sugar is thicken.
2. Keep chill.

~ Kuah Santan
1. Mix santan with water. add salt & knotted daun pandan.
2. Cook till boiled.
3. Keep chill.

Serve everything chill. best!

:: Four Layer Pudding ::



Made this for the little tummies at home who love jelly, puddings and its family.

:: Ingredients ::
1 pack of agar-agar kering
1 pack of jeli nona (strawberry)
5-6 cups of water
almost 1 cup of sugar
1 tin of evaporated milk
colourings (green, yellow & pink)
essences (vanilla, mango & pandan)
sumi jelly (optional)

:: Method ::
1. Cook 1 pack of agar-agar with sugar in boiling water.
2. Divide into three portion.
3. Flavour each portion with different essences & colour.
4. Pour the agar-agar mixture layer by layer.
5. Cook the jeli nona according to package instruction.
4. arrange some sumi jelly on top of the agar-agar mixture (no. 4)
5. Pour in the cooked jeli nona.
6. Serve chill.

:: Bread & Butter Pudding ::

ini adalah resepi untuk mengelakkan pembaziran. i had some left over vanilla sauce and bread. so dari masuk ke cik T, baiklah ditukar ke something yang boleh dimakan. made these with no specific measurement. semua main campak², tabur².



:: Ingredients ::
~Pudding~
Bread
Milk
1 egg
vanilla
sugar
lemon zest
raisins

~vanilla sauce~
3/4 can evaporated milk
roughly about 1/2 can water
roughly about 1/2 cup sugar
1 egg yolk
1 tsp vanilla essence
fruit cocktail

:: Method ::
~Pudding~
1. preheat oven at 200deg.
2. Mixed everything. rest kan sekejap.
3. bake for 1 hour or till masak.

~vanilla sauce~
1. add all except buah.
2. masak hingga mendidih.
3. chill.
4. serve pudding dengan sos + buah.

:: Puding Sos Kastard ::



i was introduced to this pudding when i was in UTM. sangat popular @ PARAM (Pasar Ramadhan). teringin sangat nak makan. got the recipe from Kak Ummi's Blog. an easy peasy pudding to make. super delicious.

i have altered the recipe a bit. buat sikit saje, sebab tak ramai pun yang nak makan.


:: ingredients ::

~ pudding
100g tepung kastard
1 liter air
1 tbsp sugar
evaporated milk (i used ideal) - kuantiti agak2

~ sos
3/4 can evaporated milk
roughly about 1/2 can water
roughly about 1/2 cup sugar
1 egg yolk
1 tsp vanilla essence
fruit cocktail


:: method ::

~ pudding
1. campurkan semua bahan except susu di dalam periuk and masak until berkilat.
2. add in susu and kacau rata. stop cooking before it gets too thick.
3. masukkan dalam bekas kecik and chill.

~ sos
1. add all except buah.
2. masak hingga mendidih.
3. chill.
4. serve pudding dengan sos + buah. (kak ummi recommend pakai fresh fruits, which will definitely be a healthier option!)

:: Longan & Strawberry Pudding ::



My younger twin son, Adib grabbed a can of longan during our weekly visit to the grocery store. Using Kak Hanieliza’s lychee pudding recipe, I altered it according to what I imagine.

It turned out great!


:: Ingredients ::
1 packet of agar-agar (I used the strand type)
1.5 l of water
1.5 cup sugar (I used not even 1.5 cup, almost 1.5 cup)
1 can of longan
1 can of evaporated milk
2 tsp of strawberry emulco (it would be great to have fresh strawberry I think)

:: Method ::
1. Separate the longan from its syrup. Set aside.
2. Boil water, sugar and agar-agar till dissolved.
3. Once dissolved, add it the evaporated milk and stir well.
4. Set aside ¼ of the mixture in another bowl. Mix in the strawberry emulco.
5. Pour in the longan syrup in the remaining mixture. Mix well.
6. Prepare some containers for the jelly. First pour in the strawberry.
7. Once the strawberry layer is set, pour in the longan mixture.
8. Add in some longan chunks in the jelly.
9. Serve cool.

Note : the jelly is soft. Pretty hard to take out from mould. Would recommend individual serving to avoid embarrassment. :p

:: my kunun² famous triffle ::

if i'm not mistaken, i got this original recipe from miss hanieliza's pages. and i've been sticking to this recipe as it turns out superbly yummy.

ingredients:-
moist chocolate cake (u can choose any cake actually, but to me choccy cake is the best)
1 tin of peach/fruit cocktail
4 cups of fresh milk
4 tablespoon custard powder
3 tablespoon sugar
few drops of vanilla essence (i've been dreaming to use vanilla pod instead)
whipped cream
1 packet of instant strawberry jelly
some whipped cream
grated chocolate (optional)

1. cube cakes or u can even crumble it up to get nice, even surface. place in a clear glass container. (i like pyrex - easy to handle)
2. pour over the juice from the fruit cocktail. set aside.
3. in a pan, pour in milk, sugar, custard powder and vanilla. put in on a medium heat and keep whisking to avoid curdles.
4. cook until it thicken a bit. (i like it smooth - not too hard, not too runny)
5. pour the custard over the cake. set aside.
6. cook the instant jelly as per instruction. for muslims, watch out the contents yeah.
7. while cooking the jelly, arrange the peaches/cocktails on top of the custard.
8. when the jelly is cooked, pour it over the fruits layer and set aside.

optional
1. whipped some cream and add drops of vanilla essence in it.
2. decorate the triffle with the cream as u wish. (seriously, triffle tastes a lot better with cream.. very sinful)
3. top it with grated choccy.
