:: Longan & Strawberry Pudding ::



My younger twin son, Adib grabbed a can of longan during our weekly visit to the grocery store. Using Kak Hanieliza’s lychee pudding recipe, I altered it according to what I imagine.

It turned out great!


:: Ingredients ::
1 packet of agar-agar (I used the strand type)
1.5 l of water
1.5 cup sugar (I used not even 1.5 cup, almost 1.5 cup)
1 can of longan
1 can of evaporated milk
2 tsp of strawberry emulco (it would be great to have fresh strawberry I think)

:: Method ::
1. Separate the longan from its syrup. Set aside.
2. Boil water, sugar and agar-agar till dissolved.
3. Once dissolved, add it the evaporated milk and stir well.
4. Set aside ¼ of the mixture in another bowl. Mix in the strawberry emulco.
5. Pour in the longan syrup in the remaining mixture. Mix well.
6. Prepare some containers for the jelly. First pour in the strawberry.
7. Once the strawberry layer is set, pour in the longan mixture.
8. Add in some longan chunks in the jelly.
9. Serve cool.

Note : the jelly is soft. Pretty hard to take out from mould. Would recommend individual serving to avoid embarrassment. :p

:: Sizzling Mee ::

husband tetiba cakap, a friend of his is coming over. *panic mode* sbb tau kat dapur takde benda sgt nak dihidang pada tetamu. teringat resepi dr blog kak nor on sizzling yee mee yg sgt simple tapi sedap mcm makan kat food court. bahan mentah pun minimal, so i made up my mind.. masak sizzling mee for them.

gambar sebelum makan tak sempat snap. kalau i buat lagi mee ni, boleh la snap. this is my second attempt, and it's super duper fast.

ingredients:-
5 biji bawang putih
halia
3 biji cili kering (potong dua)
isi ayam
sayur sawi (i tambah)
6 biji cendawan shitake kering(rendam dengan air panas sampai lembut, lepas tu potong 2)
lada hitam
3 tbsp kicap cair
2 tbsp oyster sauce
1 tbsp kicap pekat
1 tbsp tepung jagung (mix with water)
minyak bijan
mee kering (rebus sampai lembut & toskan)

method:-
1. tumis bawang putih, halia + cili kering.
2. masukkan ayam
3. masukkan 2 cawan air.
4. masukkan cendawan.
5. masukkan tepung jagung yang telah dibancuh dengan air.masak hingga kuah mendidih.
6. masukkan lada hitam mengikut tahap pedas yang disukai.
7. renjiskan sedikit minyak bijan. (lupa mau letak)
8. last sekali baru saya masukkan sawi. (nak kasik crunchy sket)

tadaaa. siap.

:: Trio Marble Cake ::



i got attracted to this colourful cake in CMG's page that i decided to make mine.

here goes the recipe, dan seperti biasa, with alterations, mengikut apa yang ada kat dapurr.

ingredients:-
250 g butter (the original recipe call for 300g, tapi rasanya masa buat ari tuh i pakai 250g saje)
200 g self raising flour
50 ml fresh milk
3 eggs
180 g castor sugar
choc emulco
strawberry emulco
vanilla essence

method:-
1. beat butter and sugar
2. add in egg, one at a time and continue mixing
3. add in flour and milk, alternately, and continue mixing
4. divide into 3 parts
5. flavour each part with choc, strawberry and vanilla
6. pour in batter alternately in a cake tin.
7. bake at 175deg for 55 mins or till done.


:: Nasi Lemak & Sambal Sotong ::

Nasi Lemak and Sambal has never been my forte. trust me when i say that!

i took almost errrmmmm almost 6 years of marriage to make it edible. :P tatau apsal. pada aku, masak sambal nih la yang paling banyak mengajar diri untuk bersabar. untuk sambal sotong tuh, mmg aku berguru la ngan maid my mother secara hands on nak jadikan sambal tuh cam gitu. my mom's sambal sotong is just so perfect that i hardly find mine near hers....

kesimpulannya, untuk dapur rumah berasap masak nasi lemak n sambal amatla susah. 6 months one pun errrrr tak sampai rasanya!


Nasi Lemak

ingredients

beras
air
santan
daun pandan (knotted)
garam
halia (sliced)
bawang merah (sliced)
serai (sometimes i masukkan, sometimes i didn't)
garam

method
1. basuh beras till clean.
2. then masukkan everything else in a rice cooker, and cook. hehe

notice i didn't put any measurement? sebabnya everytime i buat i'll try and error. :P i tak pandai bab nak agak2 air banyak mana.. :P the only tip i can give is, i normally akan letak air ikut beras banyak mana and tambah the santan pekat like quarter cup. (normally tuh bunyi cam selalu jek buat kan? kan? kan?)


Sambal Sotong

ingredients

sotong
bawang merah (pounded)
bawang putih (pounded)
bawang besar (sliced)
asam jawa
santan
blended chilli
garam
gula

method
1. tumis bawang merah and bawang putih sehingga naik bau and agak kering.
2. masukkan cili dan teruskan menumis. tumis sehingga cili betul2 masak.
3. masukkan sotong.
4. masukkan asam jawa and santan. masukkan bawang besar.
5. season with salt and sugar.

my mom's tip: goreng dulu sotong dalam kuali asing sehingga separuh masak (without minyak). it'll cut the cooking time to half!

:: Toast with Cheese and Mushroom ::



resipi nih kiranya invented masa zaman belajar dulu, while i was doing my masters degree bersama2 suami terchenta. we stayed in m'sia hall, so no cooking is allowed. lunch is not provided. tapi perut tetap laparrrrr dan mintak diisi.

so this is what i invented using our small sandwich maker. berjasa hokay sandwich maker tuh, and ever since has become a hit between the two of us. but the one in pic i masak guna sandwich press (yang jenis floating plate tuh). boleh jek pakai oven, ikut kreativiti masing2.

here goes the recipe:-

ingredients
4 slices of white bread
2 pieces of cheddar cheese
slices of fresh button mushroom
dash of pepper
slaps of butter

method
1. slap some butter atas roti
2. arrange the cheese and slices of fresh button mushroom
3. season with pepper.
4. sprinkle some grated mozarella cheese on top of the bread. (optional)
5. grill till brown.

ps : careful makan, cheese sangat panas!!
