:: Nasi Goreng Tomyam ::

my husband requested me to cook this for weekend's meal. (oleh kerana i dah lama tak masak, harus kuturutkan saje tanpa sebarang bantahan) but it makes me wonder, sapa yang mengidam sebenarnya, aku ke dia?? :P



ingredients:-
nasi putih
bawang merah
bawang putih
lengkuas (hiris nipis) - about 2 slices
1 serai, racik halus
5 biji cili padi
1-2 biji cili merah dipotong halus
2 sudu kecil tom yam paste
enough lime juice
dash of fish sauce
dash of kicap masin
daun limau purut
sotong
udang
cendawan
kailan
carrot (hiris nipis)
tomato
daun ketumbar
bawang goreng

method:-
1. panaskan minyak di dalam kuali
2. tumis bawang merah, bawang putih, serai, cili padi and cili merah sehingga naik bau.
3. masukkan lengkuas & tomyam paste dan tumis sehingga naik minyak.
4. masukkan air limau, sos ikan dan daun limau purut.
5. masukkan sotong, udang, carrot & cendawan.
6. continue sehingga lauk agak masak.
7. masukkan nasi dan tomato. gaul rata.
8. masukkan kailan dan kicap secukup rasa.
9. serve warm with chopped corriander leaves and bawang goreng.

sangat bukak selera!

:: vanilla butter cake ::

i was craving and dreaming of warm, freshly baked butter cake, that i decided to search on the net and give it a go. :) found a simple recipe in chef mamafami's blog, and i made mine, with as usual, alterations.



ingredients:-
250g butter (i used buttercup)
220g self raising flour (i used 200g)
220g castor sugar (i used 200g)
4 eggs
50ml fresh milk
1 teaspoon vanilla essence

method:-
1. line a baking pan wth a baking paper and set aside.
2. cream butter and sugar till fluffy.
3. add in one egg at a time, and continue mixing.
4. add in flour bits at a time, alternately with milk and continue mixing.
5. add in vanilla essence. sprinkle almond flakes on top of the batter.
6. bake in a preheated oven @ 180deg for 45 minutes.

this is so yummy! this recipe is definitely for keep!

ps - i set aside enough batter for few batch of cupcakes before i add in the vanilla. i ventured out by having it with additional teaspoon of baking powder (for a lighter cake), pandan essence and lemon, mixed with choc chips and almond flakes. taste so delicious!

Cantonese Fried Noodle



bila dah beranak pinak nih, mula la mencari resepi yang 'versatile'. dua² mak budak ngan anak² boleh makan without the need to cook many times. :) (dasar pemalas kan?)

so, last weekend, i decided to make this simple cantonese fried noodle. to me, this noodle macam comfort food. ala² maggi ayam gitu. hehe.

:: ingredients ::

kuah

daging (sliced)
sotong
fishballs
fishcakes
sawi
carrot
baby corn
telur (1)
bawang putih (diced)
bawang merah (thinly sliced)
ginger (sliced)
chicken stock
air
tepung jagung

noodle
kuey teow
kicap cair

:: method ::

kuah

1. panaskan minyak.
2. tumis bawang putih, bawang merah and halia sehingga wangi.
3. masukkan daging dan kacau sehingga agak masak.
4. masukkan fishball, fishcakes, sotong, carrot and baby corn.
5. masukkan stok ayam + air.
6. continue cooking till bubbly.
7. pecahkan sebiji telur and stir. (this is optional really. i prefer the noodle with no egg)
8. masukkan sawi.
9. finally, bancuh tepung jagung with a lil' bit of water.
10. masukkan bancuhan air tepung jagung to the kuah. (amount nak masuk tuh, terpulang kepada masing². kalau nak kuah pekat, masukkan lebih sket).
11. season with salt if needed.

noodle
1. panaskan sedikit minyak in a separate wok.
2. pour in the kuey teow + kicap cair.
3. gaul rata

serving
1. serve the noodle with the kuah warm.
2. add chopped bird chillies mixed with light soy sauce if desired.

:: Frozen Popiah ::



adib peminat popiah. afiq pun sama. last weekend, adib mintak popiah, so i decided to make some over the weekend. tapi hehe, i kan terlalu la amatur. my folding skill memang terlalu basic. tak cantik macam org lain fold kan. :)

anyway, here's my simple version of popiah.

:: ingredients ::
kulit popiah (thawed)
udang (potong kecik²)
bawang putih (cincang)
sengkuang (potong nipis², memanjang)
carrot (potong nipis², memanjang)
2 tablespoon oyster sauce
sedikit lada sulah (kalau suka)

:: method ::
1. panaskan sedikit minyak.
2. tumis bawang putih sehingga wangi.
3. masukkan udang.
4. masukkan oyster sauce, sengkuang dan carrot.
5. season with white pepper.
6. toskan isi popiah yang sudah siap dimasak.
7. masukkan isi popiah dalam kulit popiah, and fold it as u wish.
8. bila nak makan, goreng saje...

tips : got this tip from a book/mag/webbie which i can't remember.. kalau nak the inti to be crispy, guna pisau untuk potong. jangan sagat.

:: Tomato Salad ::



i prepared this salad to complement my chicken rice and ayam goreng berempah. so it could be a variation from those normal acar jelatah.

got the recipe from my aunty, while chatting over the food during raya. being someone who don't enjoy vege that much, i found this dish to be refreshing and extremely good especially for pregnant ladies who suffer from vomitting. definitely a healthier choice than those jeruk! :)

:: ingredients ::
a tree of corriander leaves
onion (prefer the red one rather than the holland type)
cucumber
tomato
capsicum
salt + sugar to season
lemon juice

:: method ::
1. chop everything. (for tomato, i prefer to discard the seeds as it's too watery)
2. pour in the lemon juice. (i used lemon juice from 1.5 lemon)
3. season with salt and sugar.

yummy, delicious and healthy!

ps : tips from the original chef - best prepared half an hour before eating.

:: Ayam Goreng Berempah ::



we had guests on friday night. at first, hubby asked me to cook baked pasta only, but then, after we all dengar the mother is tagging along (she's quite old), i said to myself, it's very inappropriate, as most elder people prefer rice to pasta surely! so i dished up some chicken rice (recipe as before) but i changed the chicken to ayam berempah.

got the recipe from buku chef hanieliza, and i truly believe it's such a good value buying that book, as so far most of the recipe turned out right.

so give it a try! fair dinkum easy!

:: ingredients ::
chicken (pat dry - important for the spices to stick to it)
curry leaves

:: pounded ::

3 stalks lemongrass
5 bulbs garlic
1 inch ginger

:: marinade ::
curry powder
chilli powder
white pepper
salt

:: method ::
1. marinade the chicken with the pounded and marinade ingredients.
2. leave it to stand for at least half an hour.
3. heat the oil (enough for deep frying) in the wok.
4. put in the curry leave first, then fry the chicken till brown.
5. serve warm.

:: twisted buffalo wings ::

i had these for dinner. tak sempat nak snap gambar. i everyone was so hungry, that we quickly gather at the dining lounge to enjoy dinner.

it's an easy peasy recipe that i collected from a friend of mine during seminar. hehe. (talking of giving concentration!) ;p

ingredients:-
chicken wings (cut at joints)
multi purpose flour (i used the KFC flour)
1 egg white

sauce:-
1 cup BBQ sauce
2 cups honey

sour cream dip
250g sour cream
2 tbsp italian parsley (chopped)
1/2 onion (chopped)
paprika, pepper, salt, sugar
lemon juice

method:-
1. dip the chicken in egg white, and coat with flour.
2. fry till golden brown.

sauce:-
1. heat the BBQ sauce and honey.
2. let it cool a little bit before serving.

sour cream dip:-
1. mix the sour cream with the chopped onion.
2. season with salt, pepper, sugar, paprika and lemon juice.

drench the chicken with the BBQ sauce. (i served it separately, for i want to preserve the crisp of the chicken). serve with sour cream dip and coleslaw. we had it with coleslaw + sauteed mushroom and potato + the dip. easy peasy!

ps :-
good for birthday parties. (the recipe is actually a twist to the original buffalo wings that we usually tasted. nevertheless, it's still lip samcking!)

:: Steamed Snapper ::



I went to JJ and found that the snapper was fresh. immediately grabbed one for the family.

undecided of what to cook, i finally settled at steamed snapper.

ingredients:-
snapper
ginger (thinly sliced)
garlic (thinly sliced)
shallots (thinly sliced)
red chilli (thinly sliced)
one cup of water
lime juice (5 - 6)
1-1.5 tbsp fish sauce
salt
chinese parsley
carrot
baby corn

method:-
1. rub the fish with salt and put it in a wok.
2. pour everything in,
3. close with a glass lid, and steam for 20-30 mins.



:: Bak Choy in Oy Sauce ::



I love bak choy so much. It’s green, tapi tak pahit. :P
This is one of my favourite vegetable dishes. So do OH.

Ingredients:-
Bak choy
Fresh button mushroom (quartered)
Red chilli (thinly sliced)
2-3 Garlic (Finely chopped)
1 tbsp Oyster Sauce
1 cup/glass of water
4 pieces of shrimp (deveined)
2 tbsp of corn flour, mixed with ¼ cup of water
Sesame oil

Method:-
1. Heat oil in a pan.
2. Sautée the garlic till fragrant.
3. Put in the shrimps and red chillies. Cook further till fragrant.
4. Pour in 1 cup/glass of water.
5. Let it boil.
6. Once boiled, add in the fresh mushroom.
7. Put on high heat for a minute or less, add in bak choy.
8. Stir till the bak choy is just cooked.
9. Sprinkle bits of sesame seed oil.
10. Yummy!

:: Udang Galah Masak Lemak Cili Api ::



I’ve been craving for udang galah for quite sometimes. And, I finally bought it last Friday to satisfy my craving. Hehe.

I was thinking of either curry or masak lemak cili api. OH awal2 reject curry. It’s not because he hates curry, but I believe, it is because… I can’t cook curry! He definitely doesn’t want the money to go down the drain right?

Or, on a more positive notes, perhaps, I’m good in cooking masak lemak cili api. Maklumla, mak abah org nogoghi. ;p

So here goes the menu. It’s simply easy.

Ingredients:-
Cili api (birds chillies) + turmeric (pounded till fine. Amount of chillies depend on how hot u want it to be)
Lemon grass (2 stalks)
Udang galah
Salt
French beans
Coconut milk (1 bowl of first pressed santan, and another 1.5 bowl of second and third pressed santan)

Method:-
1. Put everything in except the thick santan (coconut milk) and the beans in a pan.
2. Cook over low heat, and keep on stirring. Season with salt.
3. Once boiled, pour in the thick santan and the beans.
4. Continue cooking and stirring till it boils again.
5. Serve with warm with white rice.

Lip smacking! (Self confessed)
Ps : lepas tuh psycho sakit tumit. :p

:: Firecracker Fish - Chili's Kinda ::


I went for a lunch with my ‘lunch groupie’ on Friday. Well, it sure a long break for government servants. :D we settled for chilli’s and I usually got stuck up with either mushroom jack fajitas or anything with lamb.

On that beautiful day, one of the members ordered firecracker fish. Frankly speaking, I never fancy those, coz the name surely does not resembles flavours. Boleh gitu?

But she asked all of us to have a bite, and tell you, I was melted away. Heavenly nice!

So, I came home, and decided to give it a go. It’s more or less inspired by ‘ikan 3 rasa’. :P

Ingredients:-
Fish fillet
Shallots + garlic + ginger (pounded)
3 tbsp chilli sauce
3 tbsp tomato sauce
1 tbsp oyster sauce
½ cup water
Coriander leaves (finely chopped)

Method:-
1. Heat some oil.
2. Sautee the pounded ingredients till fragrant
3. Pour in the sauces, and keep on stirring.
4. Add in water, and cook till bubbly.
5. On a different pan, pan grilled the fish fillet.
6. Once cooked, pour the sauce over the fish. Sprinkle the chopped coriander leaves and serve warm with salad/whatever that you fancy.


:: Sauteed Potatoes and Mushroom ::


hearty breakfast at home on weekends surely is a good way to start the day. :D

the story
i went for a holiday with my dear family back in yr 1996 to disney paris. we were extremely excited, as this is going to be the first time ever we'll put our steps in europe.

it was very cold, and flakes have made their presence. hot breakfast seems so delicious, almaklumla, perut lapar.. :P

there was one dish, that captured my heart so much - sauteed potato and mushroom. sedap gila.

but...... i only attempted this perhaps 10 years later?? hahahha.

so here goes the recipe, that came from memory.

ingredients:-baby potatoes (i didn't peel the skin off. just give a good wash and sliced thinly)
fresh button mushroom (quartered)
salt
pepper
oregano
butter

method:-1. melt some butter in a pan.
2. sautee the potato till tender.
3. add in the mushroom. give a good stir.
4. season with salt and pepper. dash in some dried oregano for beautiful aroma.
5. serve warm with toasted bread with melted cheese and sausages.

:: Baked Fussili ::

Baked Fussili aka Baked pasta.

bunyi macam grand, tapi senang gila nak buat. confirm sedap and cepat.

a repetitive recipe, again, with variations. added some broccoli and cubed pineapple. used the fresh oregano instead of the dried one. different kind of sauce by leggo. (kalau tak salah - tuscan chicken. nice!)

ps - had this at half past 10 at night. sigh.... hancus diet.

:: Mihun Goreng Sempoi ::

asal ada simple mihun goreng for sunday's brekkie. :p



Ingredients:-
Mihun (roughly about 3/4 pack) - celur
Daging (potong nipis)
Carrot (potong nipis)
Cili merah (potong npis)
Capsicum (potong nipis)
Udang
Oyster sauce
Light Soy Sauce
Pepper
Bawang merah
Bawang putih

Method:-
1. Tumis bawang merah dan bawang putih sehingga wangi.
2. Masukkan daging, udang, cili merah, carrot dan capsicum.
3. masukkan oyster sauce dan light soy sauce.
4. masukkan mihun yang telah dicelur dan gaul rata.
5. hidang panas2 dengan keropok, sos cili dan bawang goreng. sempoi.

:: Fish Steak ::

Harus ku cuba semua resipi yang ada dalam buku Chef Hanieliza tuh, sebab it's extremely easy to follow, especially for beginners like me.

i gave myself a try for this Fish Steak recipe for my kids dinner. It was a hit with afiq, but not adib. well, semua orang ada taste masing2. afiq is well known dengan suka makan nasi, but not adib.

so here goes the recipe.



Ingredients:-
Ikan Tenggiri
Tumeric powder
1 tbsp oyster sauce
1/2 tsp black pepper
brocolli
carrot

Method:-
1. Pat dry the fish.
2. Coat the fish with oyster sauce, tumeric powder and black pepper.
3. Let it marinade for 1/2 hour.
4. Grill till cook.
5. Serve with steamed/blanched brocolli and carrot.

note : resipi asal kata kena perap ikan dengan 1 tbsp black pepper sauce, but i omitted that since the food audiences are kids. served the fish steak with thousand island instead.

:: Asparagus with Garlic ::

Resipi ulang tayang. with some variations though. added in shrimps & fresh button mushroom. recommended for those who loves their veges to be crunchy with strong hint of garlic.

easy peasy one.

Ingredients:-
2 eggs
salt
white pepper
red chilli (sliced)
capsicum
1 onion (sliced thinly)

Method:-1. Mix all in a bowl. whisk the egg well.
2. Heat oil in a wok.
3. Pour the egg mixture.
4. Cook till both side are done.

ps - the secret for fluffy omelette is LOTS OF OIL and make sure the oil is hot enough before you pour in the egg mixture. but anyway, it requires practice to ensure that the egg won't pecah when cooked. ;p

:: Sweet Sour Barramundi ::

after a month of no entry, i guess, this is my payback time. :D

OH was not around for the past three weeks, resulting in me, being so lazy in the kitchen. still cook, but merely simple stuff for my two boys to eat.

so here goes my next entry - Sweet Sour Barramundi. got the recipe (again) from the book that i purchased recently - Senangnya Memasak Bersama Chef Hanieliza. (highly recommended, as the recipes use the easily available ingredients, without the need to search around in the supermarket). as usual, the recipe is altered to my preference.



Ingredients:-

Barramundi
Corn Flour
Salt
5 cloves garlic (thinly sliced)
3 cloves shallots (thinly sliced)
1 cm ginger (thinly sliced)
6 tablespoon tomato sauce
4 tablespoon chilli sauce
2 red chillies (thinly sliced)
1/2 capsicum (sliced)
cubed pineapple
1 tomato (cut into six)
3/4 cup water
carrot
brocolli

Method:-
1. Heat enough oil in a wok to fry fish.
2. Coat the fish with corn flour and salt. Fry the fish.
3. Put the fish aside.
4. In a different wok, heat oil.
5. Stir-fry the shallots, garlic and ginger till fragrant.
6. Once done, pour in the sliced chilli, capsicum, chilli sauce, tomato sauce and water.
7. Season with salt.
8. Stir till thicken.
9. Pour onto the fried fish.

:: Terung Goreng Berlado (Brinjals in Chilli Sambal) ::

i got this recipe from 'Resepi dari dapur NorZailina'. it was a wedding gift from my thoughtful friend, shay.

my OH loves brinjal so much, so it definitely received a two thumb up (or perhaps i'm hallucinating it.. ahahaha) from him. easy simple recipe. less than 15 mins, it'll be ready to rock your dinner. ecceh!

here goes the recipe. (again, altered to what i have in stock)



ingredients:-
500g brinjals (i used the small, purple brinjal)
1 red onion
2-3 shallots
4 red chillies
4 green chillies (i used 8 red chillies instead)
lime juice (squeezed from 1-2 lime)
salt
brown sugar

method:-
1. blend the red onion, shallots and chillies together.
2. slice the brinjal into 2, length wise
3. heat oil in a wok. fry the brinjal. set aside once cooked.
4. reserved some oil. fry the blended ingredients, till fragrant.
5. season with salt and sugar.
6. once the 'sambal' is ready, mixed it with the fried brinjals.

walau-weh.

ps - the way i did it was - prepare the sambal first. masa nak makan, baru goreng terung and mixed it with the sambal. it's ur call anyway. :D

:: Steamed Red Snapper (Ikan Siakap Kukus) ::

overly excited with the event where OH will be back home after 3 weeks away in russia, i found myself in MPH wangsa maju, browsing through recipe books, and ended up with not 1 but 5 recipe books by chef hanieliza.

love the way she wrote the book. extremely interesting and she made me think that cooking is d*mn easy!

the recipe books are not overly priced. only RM5.50 per issue. highly recommended especially for beginners like me. ;D

so here goes my first try from the recipe. altered to 'what i have in the fridge'. ;P. will post up the pics later yeah!



ingredients:-
1 medium size red snapper
shallots (pounded)
garlic (pounded)
ginger (lots and lots of it)
1-2 tbsp fish sauce
5-6 lime (get the juice)
5-6 cili api
1 red chilli (thinly sliced)
2 lemongrass
carrot
1/4 cup water
salt

method:-
1. season the fish with salt.
2. put everything in a big wok.
3. close with a glass lid.
4. cook the fish on high heat for 20-30 mins/till fish is cooked.
5. serve with warm rice.

the chef said that you may substitue the fish sauce with light soy sauce.

highly recommended.

note to self - add more lime juice next time.

:: Nasi Lemak Hijau ::

i browsed through my favourite blog to look for something nice to cook for breakfast on sunday morning, and i cam accross this and this.

i decided to give it a try, knowing that it's a RISKY one as i'm hopeless in cooking sambal. tak pe la, kasik cuba dulu. i altered the nasi's recipe to preserve the taste of nasi lemak. omitted all kayu manis dan adik beradiknya.



nasi lemak hijau
ingredients:-

2 pot beras
2 cup santan
0.5 cup santan yang diblend dengan plus minus 6 helai daun pandan
bawang merah (sliced)
bawang putih (sliced)
halia (sliced)
1 batang serai dititik
salt

method:-
1. basuh beras sehingga bersih.
2. pour everyhting in and season with salt.
3. masak guna rice cooker. jangan lupa kacau to avoid nasi mentah.

sambal sotong
ingredients:-

sotong (obviously)
bawang besar (thinly sliced)
bawang merah (tumbuk)
bawang putih (tumbuk)
cili kering yang dah diblend
1 sudu kecil asam jawa adabi
1 cawan santan cair
gula perang
garam

method:-
1. tumis bawang besar sehingga perang at sides.
2. tumis bawang merah + putih sehingga naik bau.
3. masukkan cili blend dan continue tumis sehingga terbut minyak.
4. masukkan santan + air asam. kacau sehingga masak.
5. masukkan sotong. continue kacau sehingga sotong masak.
6. season with gula perang and garam.

untuk my boys, since the sambal tuh pedas, i gorengkan ayam for them. (my boys tak suka makan telur)

serve the nasi lemak hijau with sambal sotong, ayam goreng and telur goreng.
ps ~ i totally terlupa nak beli timun or kangkung dan condiments lain. so layankan jek nasi lemak separa lengkap gizi dia. but all in all, it's worth trying when i saw my OH tambah 2 kali. it's either the nasi is damn good or he's extremely hungry. i hope it's not the latter! ;P

:: Brocolli & Carrot Masak Kicap ::



sayur wajib ada dalam hidangan (walaupun tukang masak seniri agak liat nak memakan sayur). since there's nothing children friendly other than ayam goreng, so i decided to masak sayur goreng kicap so that at least nasi anak teruna kembar itu tak lerr kering sangat.

anak teruna no, 2 (adib) sangat suka brocolli. tapi dia makan batang jek. florets dia, hmm, normally dia kunyah² pastuh buang. alahai anak²ku.

ingredients:-
brocolli
carrot
ikan bilis
bawang putih
kicap manis
oyster sauce
air

method:-
1. heat oil in a wok.
2. tumis bawang + ikan bilis ampai agak garing.
3. masukkan kicap manis + oyster sauce.
4. masukkan air.
5. masukkan carrot. last sekali masukkan brocolli. terus angkat and serve warm.

ps ~ i like my vege to be crunchy, so selalunya, kalau masak sayur i akan masak sekejap sangat.

:: Chicken Wings Goreng Belasah ::

another dish yang i buat to accompany OH's green curry (read ~ lauk budak) :D



ingredients:-
chicken wings
garlic (crushed)
2-3 tablespoon kicap manis
tumeric powder

method:-
1. marinade chicken with garlic, kicap manis and tumeric powder,
2. heat oil in wok.
3. fry chicken till cooked.
