Fusion Oven Steam Salmon with Baked Potato, Steamed Broccoli and Garlic Bread

Dalam usaha nak menambah kuantiti makan ikan, I made this at home. Inspired by a recipe that I found in a book that husband chose at BBW sale early of the month.

Easy peasy recipe. Thanks hubster for the book. And I as usual will alter the recipe accordingly.

Ingredients:-
Salmon steak (season with salt, pepper and lemon)
1 tsp of tamarind paste
170 ml of water
3-4 cloves of garlic (chopped)
1 inch of ginger (grated)
1 green chilli
soy sauce (amount depends on your taste bud)
1-2 tbsp of honey (i add this. original recipe takde)
1 tsp corn flour + 1 tbsp of water
daun bawang*  optional

Method:-
1. Preheat oven. Fill up a baking tray (tray1) with boiling water and put another tray (tray 2) in the middle of the baking tray. Arrange the salmon on tray 2. Wrap it with aluminium foil. Oven steam in the preheated oven for like 30 mins.
2. In a saucepan, dissolve the tamarind paste with water. Mix in the garlic, ginger, green chilli, soy sauce and honey. Stir well till bubbly.
3. Mix the cornflour and cook the sauce further till thicken.
4. Serve the salmon with the sauce together with baked potato, steam broccolli and garlic bread. Nyums!

Peanut Butter Chocolate Cheese Tart

Made this gem on my daughter's first birthday party. Found the resepi in mom's magazine - Saji, snapped a pic and balik rumah buat. Super easy yet yummy. As usual, altered to my preference.

Ingredients:-
60ml fresh milk
90gm cooking chocolate
226gm cream cheese (i used a block of cream cheese)
125gm icing sugar (i used 100gm, and yet I still feel I need to reduce the sugar amount)
240ml cream (i used a small box of thicken cream)
1 tsp vanilla essence
250gm digestive biscuits (I used cream-o choc biscuit + melted butter)
125gm peanut butter (I used peanut butter with chocolate)

Method:-
1.Crumb the biscuit dan padatkan as the base of the tart. Set aside.
2. Heat the milk and melt the cooking chocolate. Put aside.
3. Cream the peanut butter, cream cheese, vanilla and sugar.
4. In another bowl, whip the cream. Take 1/3 of the whipped cream and mix with no. 1.
5. Fold in the balance of cream to no.1.
6. Pour the mixture on the prepared base.
7. Pour the choc ganache. Serve chill.

Cheesy Nachos

There was a night, we went out for dinner, as nothing was in fridge and I was not so well to cook. Afiq insisted on having steaks for dinner. (rabak poket Daddy kalau asyik nak makan cam tu sayang oii)

So, we went to this famous master chef restaurant - Chef Zubir at Wangsa Melawati. Order la few things - lamb, burger and nacho's for appetizer. Nacho's dia adalah sangat sedap, walaupun simple. Tapi makan tak puas sebab portion kecik and share anak beranak.

So I decided to give a try. Main hentam jek, based on taste bud memory. So here it goes, nacho's my version.

Ingredients:-
1 paket nachos (besar punya - I used mission wrap, flavour butter and garlic.. I think BBQ flavour would be nice too)
Chopped onion
Minced meat
Pasta sauce (In my case, I used sos baked pasta yang tak habis)
Grated mozarella and cheese
Chopped coriander leaves
Chopped red capsicum

Method:-
1. Brown the meat, capsicum and onion in olive oil.
2. Add the pasta sauce. Mix well and set aside.
3. Arrange the nachos in a microwavable container.
4. Distribute the cooked meat evenly.
5. Sprinkle with cheese & chopped coriander leaves.
6. Heat in microwave on high for 2-3 mins or until cheese melt.
7. Serve immediately.

Would be nicer (I think) if you serve it with chopped tomato + green chillies (or jalapeno).

Rosemary Grilled Chicken

Menu tatkala tidak mampu berlama-lama di dapur kerana kekangan masa. Suka cara masak macam gini!

Ingredients:-
1 whole chicken
Dried rosemary herb
Lemon
Salt
Pepper
Capsicum
Potato
Carrot
Mushroom
Olive oil

Method:-
1. Potong carrot, capsicum, mushroom & potato (i leave the skin on utk potato). Jangan potong nipis sangat. Biar gabak-gabak. :D
2. Marinade chicken with dried rosemary herb, lemon juice, salt, pepper and olive oil
3. Susun semua dalam tray yang dah dilapik dengan baking paper
4. Grill dalam pre-heated oven for 60mins. (Kalau ayam kecik, i think 45-50 mins is enough. kalau lama sangat nanti kering)

Salmon in Lemon Marinade

I made this ages ago. For my dear husband.

Ingredients:-
1. Salmon steak
2. Lemon juice
3. Salt
4. Pepper

Method:-
1. Marinade salmon with lemon, salt and pepper
2. Pan fry with olive oil (skin side first till crispy, and flip to the other side when done)
3. Serve with lemon wedges and creamy mashed potato. Done!

Salmon Teriyaki

I know salmon is good, but it is very hard for me to take salmon. Sebab utama : ada sikit rasa hanyir. :P So the best way to make me eat salmon - buat teriyaki. Bunyi jek susah, tapi buek ee sonang yo!

Ingredients:-
1. Ikan Salmon
2. 2-3 ulas bawang putih (cincang)
3. Kicap manis
4. Madu
5. Black pepper

Method:-
1. Marinade ikan dengan semua bahan di atas. Biarkan dalam setengah jam.
2. Pan fried dengan olive oil. Siap!

I serve dengan mashed potato.

Mashed potato recipe:-

Ingredients:-
1. Potato 
2. Butter
3. Susu
4. Garam

Cara-cara saya:-
1. Boil potato sampai lembut.
2. Drain the potato
3. Mashed the potato with butter, susu + garam. tambah la pepper kalau suka. Siap..

Sawi Bunga + Carrot in Oyster Sauce & Sesame Oil

Omelette, my way


A perfect weekend starts with a perfect breakfast, in my case, moist omellete with bread and cheese. Rupa-rupanya susah jugak nak gulung omellete ni. pfft! Agak-agak buruk bebeno rupa omelette tu, hancurkan saje jadi scramble egg. :P

Ingredients:-
1. Olive oil
2. Red capsicum (diced)
3. Telur
4. Garam
5. Susu
6. Butter

Method:-
1. Whisk telur, susu (dalam 2 tbsp), garam & butter. Asingkan.
2. Tumis red capsicum (dan ingredient lain kalau nak, e.g. fresh button mushroom, turkey slices, etc) dengan olive oil.
3. Tuangkan telur yang telah dipukul dan start gulung bila dah hampir masak.
4. Serve warm with chilli sauce + bread.and a cup of coffee. :)

Fajita Sandwich

Senang bangat nak buat ini.

Ingredients:- 
1 paket store bought fajita marinade (brand mccormick - harga dalam rm4++ sepaket)
Slices of chicken breast
Fresh button mushroom (sliced)
Olive oil
Capsicum
Onion (sliced)
Cheese
Salad
Buns/Tortilla

Method:-
1. Marinade chicken slices.
2. Cook chicken in pre-heated olive oil. Set aside.
3. Sautee onion, capsicum + mushroom. Set aside.
4. Serve with warm tortilla/buttered bun, salad, cheese + chilli sauce.
5. If budget permits, serve it with tomato salsa (chopped tomato + coriander leaves + chopped onion + salt + lemon) as well as sour cream. Nyums!

Creamy Seafoood Pasta

This was an express menu, especially for the kids, after a dip in the pool.Super fast, 15 mins, it's already on the table. Eat it while warm.

Bahan-bahan:-
Spaghetti (Cooked al dente as instructed on packs, reserve some liquid for pasta sauce)
1 small pack of cooking cream
1 bawang besar (hiris)
2-3 ulas bawang putih (hiris)
Minyak zaitun untuk menumis
Buah zaitun (hiris)
Tomato cherry (potong 4)
Red capsicum (dihiris)
Seafood (I pick udang & lala)
Fresh button mushroom (hiris)
Sedikit daun basil (saya guna dried basil)
garam + black pepper

Kaedah:-
1. Tumis bawang besar dan bawang putih menggunakan minyak zaitun sehingga wangi.
2. Masukkan capsicum + seafood.
3. Masukkan sedikit air rebusan pasta. Biarkan sehingga seafood masak.
4. Masukkan cream, tomato, buah zaitun, mushroom, basil, garam + black pepper.
5. Masukkan pasta yang telah dimasak dan gaul rata.

Makan kena panas-panas. Kalau ada chilli flakes lagi umph!

Kari Ikan


My in law hails from Penang, the land of curry. Hence, my husband's taste bud. I on the other hand was brought up eating Negeri Sembilan food. See the relation? No? Yes?

I was hopeless in cooking curry. Like seriously.

10 years of marriage, baru la eden ghoti nak masak kari. Thanks to my cousin yang bagi tips. So i perturunkan (ecceh!) tips kat uols plak. Ini ilmu jugak kan?

Bahan-bahan:-
Blend
Bawang besar
Bawang putih

2 sudu teh halba campur
Daun kari
1 pek kecil rempah kari ikan (saya pakai Adabi) + air panas
Asam jawa (saya guna pes asam jawa Adabi)
Bendi
Tomato
Ikan (can be jenahak. tenggiri, bawal, etc)
Air
Santan (saya pakai 2-3 sudu besar santan kotak Harmony)

Kaedah:-
1. Tumis bawang besar + putih yang telah diblend sehingga wangi. Masukkan daun kari + halba campur.
2. Masukkan rempah kari yang telah dibancuh dengan air panas sehingga menjadi pes. Tumis sehingga pecah minyak.
3. Masukkan air & 1 sudu kecil asam jawa.
4. Masak sehingga pecah minyak. Masukkan santan dan biarkan mendidih & pecah minyak.
5. Masukkan ikan, bendi, tomato serta perisakan dengan garam.

Layankan dengan nasi panas + sambal belacan. Nyums.

Kerabu Pegaga


Kerabu yang membangkitkan selera.

Ingredients:-
Pegaga (dipotong)
2-3 sudu besar santan pekat
1-2 sudu besar air panas
2-3 ulas bawang merah dihiris halus
Sedikit kerisik
Jus limau nipis
Lada hitam

Method:-
1. Gaul rata semua bahan.
2. Perisakan dengan garam secukup rasa.

Sesuai dimakan semasa di dalam pantang. Cuma omit limau nipis.

Economic Bubba Gump-ing at home


Super fast express meal to satisfy hunger spasm.

Ingredients:-
Lemon juice/Lime
Shrimps (deveined, tinggal kulit sket jek kat belakang) 
Tepung tempura (bancuh dengan air)
Bread crumb

Method:- 
1. Bersihkan udang dan perap dengan lemon juice dan sedikit garam. Biarkan sebentar
2. Celupkan udang yang telah diperap dengan tepung tempura yang telah dibancuhkan dengan air.
3. Selepas dicelup dengan batter tepung tempura, golekkan udang di dalam bread crumbs.
4. Goreng menggunakan minyak panas.
5. Hidangkan bersama tartare, chilli sauce & perahan jus lemon.

Asam Pedas Ikan Tenggiri


Dulu-dulu aku tak pandai masak asam pedas, sekarang, dah terer. #libasrambutkebelakang

Ingredients:- 
Blend
1 biji bawang besar
3-4 biji bawang merah
3 biji bawang putih
sedikit kunyit hidup
sedikit belacan
2-3 sudu besar cili kering yang telah diblend

Lain-lain
2-3 keping ikan tenggiri/senangin/pari
daun kesum
daun ketumbar
tomato (potong 4)
bendi
1 sudu kecil asam jawa Adabi
2 cawan air (cawan budak yang beli kat ikea tuh)  

Method:-
1. Tumis bahan yang diblend (kecuali cili) di dalam minyak panas yang banyak.
2. Bila dah hampir kering air, masukkan cili. Tumis sehingga terbit minyak dan cili garing.
3. Masukkan air + asam jawa. Biarkan sehingga mendidih.
4. Masukkan ikan, tomato, bendi, daun kesum dan ketumbar. Perisakan dengan garam secukupnya/
5. Continue cooking sehingga ikan masak. Nyums!

Makanan untuk Tambah Susu Badan : Air Longan Kering & Kurma Merah

 

Untuk kawan-kawan yang sedang menyusukan anak. Ni petua daripada mak bidan yang mengurut tu bagi aku untuk membantu meningkatkan production susu. Since ni blog masak-masak, aku share la resepi ni.

Ingredients:-
7 biji longan kering
7 biji kurma merah
gula batu secukup rasa
air cukup-cukup untuk rendam bahan kering di atas

Method:-
1. Rebus bahan di atas sehingga menggelegak.
2. Minum suam-suam.

How does it taste? Macam rasa lai chi kang. SEDAP! longan kering & kurma merah tu biasanya beli kat kedai ubat cina

Chocolate Puff



Seronok sangat buat kuih nih. Sebab end product dia nampak sangat 'gah' tapi sungguhlah effortless..

 3 ingredients, and you're off to set the appetite. Kids are happy, Husband is happy.. Mommy senyum sorang-sorang sebab this is super duper easy.

Highly recommended for 'suddenly show up' guests. (as long as you keep the puff pastry ready in your fridge)

Ingredients:-
1. Pastry puff (frozen)
2. Cooking chocolate (Cut to your desired size)
3. Egg yolk (to brush)

Method:-
1. Thaw the frozen puff.
2. Cut into desired shape. In my case, I just potong to a small rectangular shape.
3. Put the chopped choc in the middle and roll the pastry.
4. Brush with egg yolk.
5. Bake in a preheated oven for about 15mins at 200deg.

In less than 30 mins, SIAP SEMUA. you can change the filling accordingly. I've tried kaya, and tuna with mayo & lemon for savoury puff. sangat sedap. Excellent for tea or brunch. or even breakfast.
