Churros



feeling adventurous to try out this recipe fr breakfast. but will definitely alter the recipe if i happen to make it again in the future.

Bahan-bahan
250ml water
1 tbsp sugar (will increase it a little bit next time)
1.5 cup flour
pinch of salt
vanilla
1/2 lemon

Method
1. Bring water, salt & sugar to boil.
2. remove from heat & beat in flour until smooth.
3. beat in egg & vanilla until mixture is smooth & satiny. set the batter aside.
4. put the batter into a piping bag, fitted with a fluted nozzle. Pipe out batter to the desired length. (i find shorter churros nicer, sebab sekali ngap habis. :P)
5. Pour oil into a pan. add lemon & heat the oil.
6. fry the piped batter until golden brown.
7. coat the churros with icing sugar cinnamon.
8. best eaten with chocolate dip.


Triple Chocolate Cupcake



It's pretty hard to say no when kids requested me to cook. so bukak la buku-buku resepi nak buat cake. end up with this as my selection. mula-mula nak buat red velvet, tapi mengenangkan colouring yang terlalu banyak, tak jadi pulak nak buat. plus takde cream cheese in stock.
Bahan-bahan
200g raising flour + 50g cocoa powder (sifted)
250g butter
100g cooking chocolate bar
225g castor sugar
3 eggs
chocolate chips

Method
1. Melt butter & chocolate bar in a pan over medium heat. keep stirring to avoid burning.
2. Once melted, put aside and let it cool.
3. add in one egg at a time & mix well. (i guna senduk kayu saje)
4. add in the sugar & mix well.
5. add in flour + cocoa powder bit by bit & mix well until u achieve a smooth batter.
6. divide batter into papercups. sprinkle with generous amount of choc chip.
7. bake in a preheated oven at 200deg for 20-25 mins.
8. ice it with choc frosting, butter cream or leave it as it is for simplicity.

ps - cake pretty dense, bukan jenis yang airy cake. it's more of brownie type in my opinion.

Ayam Goreng Berempah



Pelakon utama dalam drama Nasi Lemak dan sahabat-sahabatnya, yang menjadikan dish ini kids friendly. :P

Bahan-bahan
3 whole leg chicken
2 batang serai
3 biji bawang putih
1 inci halia
2 sudu besar rempah kari ayam
garam
daun kari

Method
1. Kisar serai, bawang putih dan halia.
2. Perap ayam dengan bahan kisar, rempah kari dan garam.
3. Panaskan minyak.
4. Apabila telah panas, masukkan sedikit daun kari (dalam 5 batang) dan goreng bersama ayam sehingga masak.
5. Siap.

ps - boleh jugak tambah lada sulah dan serbuk cili jika suka pedas.

Sambal Nasi Lemak (Basic)



sambungan entry nasi lemak..

Bahan-bahan blend
3 biji bawang besar (in my case - lebih kurang 1 bawang besar, 5 bawang merah)
sedikit belacan (blend)
3 sudu besar cili kering yang telah dikisar halus
1 bawang besar dimayang kasar
1 tsp gula
sedikit garam
1 tsp pati asam jawa + 1/2 cup air

Method
1. Panaskan minyak. Pastikan minyak cukup untuk tenggelamkan bawang.
2. Tumis bawang sehingga agak garing. Masukkan cili kisar dan tumis sehingga pecah minyak.
3. Masukkan bawang besar yang dimayang kasar, gula, garam & asam jawa.
4. Masak sehingga kuah pekat.

ps - boleh jugak campur dengan ikan bilis yang telah digoreng. saya malas.

Nasi Lemak dan Sahabat-sahabatnya



Nasi Lemak adalah juadah yang istimewa di rumah. hahahaha. sebabnya setahun sekali nak masak nasi lemak pun susah. mana tanya, dapur cuma berasap masa weekend. lepas tuh, konon-konon nak cut down on santan intake, sebab during weekday, lauk bersantan dah jadi macam lauk hari-hari.

Meh nengok cara masak nasi lemak cara saya.

Bahan-bahan
3 cawan beras (saya pakai beras siam wangi)
4 cawan santan (2 kali perah)
sedikit garam
3 bawang merah dimayang halus
1 serai diketuk
2 inci halia dihiris halus
3 daub pandan disimpul

Method
1. Basuh beras dan toskan
2. Masukkan kesemua bahan di dalam periuk nasi.
3. Masak seperti biasa. saya pakai rice cooker sahaja.

Served this with sambal, ikan bilis goreng, telur mata, kangkung goreng & ayam goreng berempah. Nyums.

ps - lihat berapa kali perkataan goreng diulang-ulang. begitulah banyaknya minyak dah masuk dalam usus. haihhh. menyesal kemudian, dapat kenyang sahaja. eh. dan gemuk juga.

Homemade Beef Burger



Apsal ntah bersemangat nak masa burger sendiri. this is super easy. so lupakan la daging burger segera yang ada di pasaran, sebab kita boleh buat sendiri kat rumah easily.

Bahan A
daging fresh
2-3 ulas bawang putih
lada hitam
Mixed grilled spices (boleh beli kat kedai yang jual BBQ stuff. kalau takde, boleh jek ganti dengan salt, paprika, black pepper)
seasoning ketchup (saya guna brand maggi. boleh gak substitute dengan lea perrins/worchestire sauce)

Others

button mushroom (sliced, and sauteed)
Onion (sliced and sauteed)
cucumber slices
cheese
Chilli sauce
Roti burger (spread some butter & grill)

Method
1. Grind (kisar) Bahan A.
2. Menggunakan skill main plastesin masa kecik-kecik, bentukkan beef patties, dengan anggaran saiz cukup untuk ditutup dengan roti burger.
3. Set aside for an hour or two. Or in my case, i marinade satu hari. (Prepare pagi, masak petang)
4. Grilled the beef patty macam masak daging burger biasa.
5. Assemble with your favourite pelakon tambahan. in my case, i serve with cheese, sauteed mushroom, onion & sos cili.
6. Siap.

ps - makan agak comot sebab gedabakkk! :P

Ayam Masak Madu



Masak ayam ni utk dimakan dengan nasi hujan panas. sangat sempoi la masaknya.

Sumber resipi : seperti biasa, buku kak hanieliza.

Bahan Tumis
1 kulit kayu manis
1 kuntum bunga lawang
1 biji buah pelaga
3 kuntum bunga cengkih

Bahan Kisar
Cili kering
1 bawang besar
3 ulas bawang putih
1 inch halia

Bahan Lain
3 whole leg chicken (diperap dengan garam & kunyit)
4 tbsp sos tomato
3 tbsp madu
1 bawang besar (dihiris)
1 cawawn kacang pis ** ganti dengan carrot
minyak masak

Method
1. Panaskan minyak.
2. Goreng ayam sehingga masak.
3. Angkat ayam dan toskan.
4. Tinggalkan sedikit minyak menggoreng (anggaran 1 senduk)
5. Tumis bahan tumis sehingga wangi.
6. Setelah wangi, tumis bahan kisar sehingga pecah minyak. this might take quite sometime.
7. Masukkan sos tomato, madu, ayam dan carrot. Kacau rata.
8. Setelah kuah pekat, sedia dihidang.

Nasi Hujan Panas



mula asal, nak masak nasi beriani. tapi rencah tak cukup. tunggu husband balik beli barang punya la lama. so last-last, tukar plan. masak nasi hujan panas. ikut resipi sebijik-bijik, sebab selalunya kalau masak nasi yang ada letak susu selalu termentah. hahahahaha. dah nak masuk 9 tahun kahwin pun selalu payah nak adjust susu. :P

resipi saya ikut kak hanieliza punya. tarak alter this time. ikut sebijik2.

Bahan
4 cawan beras basmathi (dibasuh & ditos)
4 cawan air
1/2 cawan susu cair
3 biji tomato (dicincang)
1 batang serai (dititik)
2 helai daun pandan (disimpul)
1 kiub pati ayam ** saya guna 1 sudu besar pati ayam (liquid punya)
garam secukup rasa
pewarna hijau, merah, kuning
2 sudu makan marjerin
1 sudu makan minyak sapi

Bahan B
1 kulit kayu manis
2 kuntum bunga lawang
3 biji buah pelaga
3 kuntum bunga cengkih
3 biji bawang merah (blend)
1 ulas bawang putih (blend)
1 inch halia (blend) ** saya hiris saje.

Lain-lain

daun sup ** saya guna daun ketumbar
bawang goreng

Method
1. Tumis bahan B, serai dan daun pandan sehingga naik bau.
2. masukkan air dan garam sehingga mendidih.
3. Masukkan susu cair, pati ayam, tomato & beras. Kacau rata.
4. Masak nasi seperti biasa. (saya masak atas dapur dengan api yang kecil)
5. Apabila nasi hampir kering, titiskan pewarna di 3 tempat yang berasingan. (1 warna 1 spot)
6. Biarkan nasi masak. Gemburkan dengan hati-hati untuk elak nasi hancur.
7. Hidangkan nasi bersama bawang goreng dan daun ketumbar/sup.

Note to self:-
1. reduce the colour amount next time. meriah benar la pulak nasik saya.

Rosti




Rosti is one of my favorite order kalau makan dekat Marche, the Curve. potato yang disagat, dikepal-kepal, dipenyek-penyek, pan fried with butter, served with sour cream ini sungguh yummy!

ingredients pun basic sahaja. cuma agak leceh saje nak buat sebab renyah nak sagat kentang. enak dimakan bersama sausages, or smoked salmon or begitu sahaja. saya makan ngan sos cili. dasar tekak melayu. :)

Ingredients
Kentang - dipotong halus/disagat
butter
salt
pepper


Method

1. Kentang yang telah disagat/dipotong halus hendaklah ditos kering.
2. melt some butter dan gaulkan bersama kentang. season with salt and pepper.
3. Panaskan butter di dalam pan leper.
4. masukkan kentang dan ratakan dengan belakang penyudip/sudu.
5. Masak sehingga agak garing on one side dan 'flip' kentang untuk masak another side. sila guna skill masterchef untuk melambung-lambung kentang ke udara. :P
6. Serve warm with sour cream & sausage or smoked salmon. In my case, I just had it warm with chilli sauce. sudah cukup enakkkk!

Cream Of Mushroom Soup



I was craving for a good cream of mushroom soup (like those you could get at Marche). I knew it's pretty simple to make, so I dish up mine together with the olio pasta for dinner. Adib love it, OH got himself 2 generous serving. walla! I'm one happy cook!

Source of recipe : Allrecipes.com --> but altered ikut suka hati

Ingredients
1 packet of fresh button mushroom
1/2 packet of enoki mushroom
1 medium onion (chopped)
Chive (chopped)
1 litre of water + 2 tbsp of chicken stock
1 small pack of cooking cream
Thyme
2 tbsp of butter
1 tbsp of flour

Method
1. Boil the mushroom, thyme, onion & chicken stock.
2. Pureed no. 1
3. In another pan, melt the butter.
4. Add in flour, and mix till smooth.
5. Pour in the puree.
6. Add in cream.
7. Add in 1/2 pack of enoki mushroom. Season with salt & pepper.
8. add in chopped chive just before serving.

Had mine with warm garlic bread. Menari-nari lemak di perut. Yikes. :P

Spaghetti Aglio Olio



When you are so lazyyyy to cook or time is toooo tight, this is definitely the solution for a healthy (well almost, compared to fast food!) meal.

Ingredients

Spaghetti (cooked al dente)
3 cloves of garlic (chopped)
1/2 tsp chilli flakes (reduce it if you're serving this to kids)
prawns (de-veined. could substitute this with calamari, chicken, pepperoni, mushroom or whatever you fancy)
3 tbsp of melted butter
3 tbsp of olive oil
1 bunch of chinese parsley (chopped)

Method
1. Heat oil in a wok.
2. Sautee garlic, chilli flakes & parsley till fragrant.
3. Add prawns.
4. Add in cooked spaghetti & melted butter.
5. Give a good stirrrr. Siap!

ps - you could serve this with grated paramesan if you want. but seeing the amount of butter added, i skip the cheese. :P

Kari Kepala Ikan



Me and curry never get along well. 8 years of marriage, and I still fail to cook this favourite dish of OH.

Since the other day, my attempt to cook my 'most of the time' disastarous asam pedas went succesful, I decided to give this another try.

Again this time, I turned to Kak Hanieliza's recipe.

Ingredients
A
5 biji bawang merah (blend)
2 ulas bawang putih (blend)
1 inch halia (sliced)
1 tbsp halba campur
3 tangkai daun kari

B
1 small packet of serbuk kari ikan (I used adabi)+ 1/2 cup of water
1 keping kepala ikan tenggiri
4 bendi
3 biji cili hijau
2 biji tomato
2 tbsp asam jawa + 1/2 cup of water
2 cups of santan
minyak

Method
1. Tumis Bahan A sehingga wangi.
2. Masukkan rempah kari & masak sehingga pecah minyak & garing
3. Masukkan air asam jawa. Biarkan mendidih
4. Masukkan santan. Biarkan mendidih.
5. Masukkan ikan, bendi & cili hijau.
6. Kecilkan api & masak sehingga pecah minyak.
7. Apabila mendidih, masukkan tomato & sehingga pecah minyak sekali lagi.
8. Makan panas-panas dengan nasi putih/roti canai. Best.

Verdict : Hari ini dalam sejarah. Kari saya ada rupa kari dan rasa macam kari. :P

Brussels Sprouts in Oyster Sauce



This vege is pretty expensive. RM8.50 per packet - roughly 16 pieces in a pack.Dish up this vege in a very simple manner. I enjoyed it but not OH.

Ingredients
3 cloves of garlic (Chopped)
Brussels sprouts
Carrot
Olive Oil
2 tbsp Oyster Sauce

Method
1. Chopped the end side of the sprout & make 'X' cut half way.
2. Heat the olive oil.
3. Sautee the garlic till fragrant.
4. Add in carrot & brussels sprouts.
5. Add in oyster sauce & some water.
6. Give a good stir. Done!


Asam Pedas Ikan Pari



Dah 8 tahun kahwin, saya tak pernah masak ikan pari dekat rumah. :P

So, this is my very first attempt masak ikan pari. As usual, guna buku kak hanieliza. Thanks a lot Kak Hanie. Banyak ilmu memasak saya dapat. Maklumla sebelum ni ilmu masak memang takat nyawa-nyawa ikan.

Ingredients

2 keping ikan pari
Bendi
1-2 tbsp asam jawa + 3 cawan air
Daun kesum

Blend:-
Cili kering (I used about 3 tbsp)
1 biji bawang besar
3 biji bawang merah
3 ulas bawang putih
1 tsp serbuk kunyit

Method

1. Tumis bahan blend sehingga pecah minyak. --> this will take quite sometime. So sabarrrrrr!
2. Masukkan asam jawa + air, dan masak sehingga mendidih.
3. Masukkan ikan, garam, daun kesum & bendi. Masak sehingga mendidih
4. Sedap dimakan dengan nasi panas-panas.

ps - simpan semalaman. Esoknya, makan cucur udang/bilis cicah kuah asam pedas. Confirm tak pandang dah cili sos. :)
